First published in 1989, Pyramids is Discworld novel 7 and one of the great standalones: Egypt pastiche, assassin-school set-piece, satire of religion and bureaucracy, and a coming-of-age story about a young man who would rather be competent than divine. You can start here. You do not need the Witches or the Watch. You only need a taste for Pratchett at full invention, gods in the plumbing, history with a hangover, and a climax that treats spacetime as something you can trip over.
